​1. Lunchbox Pizza Quesadillas

Recipe;

  • Small flour tortillas
  • 3 tbsp spaghetti or pizza sauce
  • 30g grated cheese
  • 8 slices pepperoni or ham
  • Non-stick spray

Method;

  • Spray frying pan with non-stick spray
  • When the pan is fairly hot, place 1 flour tortilla in the pan
  • Spread on the sauce and add a thin layer of pepperoni or ham (plus anything else you like!)
  • Cover with grated cheese and place the second flour tortilla on top
  • Let the bottom brown and flip over
  • One both sides are browned and the cheese has melted, remove from the pan and allow to cool for a few minutes
  • Once cooled, sliced into quarters


2. Ham & Cheese Muffins

Recipe;

  • 255g self-raising flour
  • 1/2 tsp baking soda
  • 240ml milk
  • 6 tbsp mayonnaise
  • 75g finely chopped, fully cooked ham
  • 50g grated cheese

Method;

  • In a large bowl, combine flour and baking soda
  • In a separate bowl, combine remaining ingredients and stir into dry ingredients just until moistened
  • Fill grease or paper-lined muffin cups two-thirds full
  • Back at 425° for 16-18 minutes or until golden
  • Sprinkle with some grated cheese while still hot


3. Whole-grain no-bake granola bars

Recipe;

  • 255g puffed brown rice cereal (unsweetened)
  • 255g oats
  • 140g sunflower seeds
  • 30g shredded coconut
  • 95g dried fruit
  • 250g peanut butter
  • 170g honey
  • 1 tsp vanilla extract
  • 175g mini chocolate chips (optional)

Method;

  • Combine the cereal, oats, nuts, seeds, coconut and fruit in a large mixing bowl
  • Heat the peanut butter, honey and vanilla in a small saucepan until warm - do not boil
  • Pour the peanut butter mixture over the cereal mixture and mix well while still warm
  • Pour the mixture into a 9x13 inch pan
  • Pack the mixture down firmly with moist fingers
  • Sprinkle on the mini chocolate chips and press them in firmly
  • Cover with cling film and leave in the fridge to cool completely
  • Once cooled, cut into 24 bars and store in the fridge


4. Chicken Taco Salad

Recipe;

  • 1/4 tsp olive oil
  • 2 tbsp sour cream
  • 1 tsp white wine vinegar
  • 1 baby gem lettuce, shredded
  • 50g sweetcorn
  • 5 cherry tomatoes, halved
  • 75g cooked BBQ chicken
  • Juice of 1 lime
  • 1/2 small avocado
  • 1 corn taco shell, broken into pieces

Method;

  • Make the dressing by combining the oil, sour cream and vinegar - keep in the fridge
  • Put the lettuce, sweetcorn, tomatoes and chicken in a lunchbox.
  • Stir the lime juice into the avocado and put on top - pack the dressing on the side
  • Scatter the taco over the salad to serve


5. Tortellini with Pesto & Broccoli

Recipe;

  • 140g tenderstem broccoli, cut into short lenghts
  • 250g fresh tortellini
  • 3 tbsp pesto
  • 2 tbsp toasted pine nuts
  • 1 tbsp balsamic vinegar
  • 8 cherry tomatoes, halved

Method;

  • Bring a large saucepan of water to the boil, add the broccoli and cook for 2 mins
  • Add the tortellini and cook according to the pack instructions
  • Once cooked, drain both and gently rinse under cold water to cool
  • Toss the pesto, pine nuts and balsamic vinegar with the cooled tortellini & broccoli
  • Add the tomatoes and mix together
