Shamrocks Cupcakes for Saint Patricks Day ☘️

Ingredients



Cupcakes:

- 150g Caster Sugar

- 150g Butter

- 150g Self Raising Flour

- 3 Medium Eggs

- A drop of milk

- 2 Teaspoons of Vanilla Extract

Icing:

- 200g Icing Sugar

- 100g Butter

- 2 Drops of Vanilla Extract

Method:

1) Preheat the oven to 190C or gas mark 5

2) Grease your cupcake tin and place in paper cases to tins

3) Add butter and sugar into a mixing bowl, mix until soft and fluffy

4) Add eggs, milk and vanilla extract and mix

5) Sieve the flour into the other ingredients and stir until fully mixed

6) Spoon mixture into the cupcake tin and place into the preheated oven

7) Cook for 15-20 mins, remove from oven and then place cupcakes on a cooling tray

8) For the icing mix your butter and icing sugar together and blend until smooth

9) Add 3 teaspoons of the green food colouring to the icing and mix

10) Add to piping bag, pipe through onto cupcake and serve
